LilyPond
WikiTeX's music language is LilyPond, which looks very much like the RightThing. ... and I don't care much for sheet-music.

There is also a conversion program called abc2ly.

AFAICT, it's got everything become the open standard.

Lilypond creates gorgeous output, but the file format itself is quite baroque. I'm more enthusiastic about MusicXML. The Lilypond program can handle it.

All I really care about is inputting an easy, ABC-like format, and getting out a MIDI.
